Our daughter-in-law called all excited because she found a new craft to make. Every fall we get something new from her to decorate the house. This year was no exception.
She told me how she made it, so I went and Googled it. They are so easy to make and as quilters we definitely have all the supplies and if we don't there is a dollar store in every shopping centre. I do plan on making a few to go with this one.

I love a really good carrot cake and I do have one of the best recipes BUT the farmer is diabetic so it limits my baking. I flatly refuse to use any sugar substitutes so I cut back on sugar or just don't put icing on cakes. To do that though, it has to be really moist and yummy all on it's own.
I added pecans to this one because that is the only baking "nut" I use. I made a second one and added dried cranberries. I did cut the sugar content back to less than 1 cup. Maybe by 2 tablespoons, because every little bit counts.
