Christmas baking

 When you marry someone from another country, you are fortunate to experience different foods.  Foods his mother made to perfection.  I have never, ever known anyone who could cook and bake like Karl's mother.  Her food melted in your mouth.  All of it.  From breakfast to supper and everything in between.

One of our favourites comes from this cookbook

Our favourite cookie is Klejner!!  The very first recipe was found in a cookbook dating back to 1766!!  I'm sure every region of tiny Denmark has their interpretation of the recipe but this is the one we use.
Everyone in the family loves them -- everyone!!  We used to make 5 batches because we knew on Christmas Eve at least two batches would disappear.  Now we are down to 2 batches because they now have the recipe and can make their own.  Problem is, they don't taste like Grandma and Grandpa's.  
The cookies with the "X" are the Klejner.  I have made the others, especially the jam filled but the Klejner recipe was requested over and over again.  We don't put the icing sugar on at the end of the cooking because Karl is diabetic.  This is a great recipe for him because the sugar content is low.



I was going to copy and paste the recipe here but it is so much easier to give you a PDF.  There is a typo -- maybe more.  Oh well, it's early in the morning.
